Beef Crostini with Bitter Orange and Toasted Pumpkin Seeds

Ingredients:
1 lb. beef tenderloin trimmed
1 oz. blackened spice
Rub tenderloin with blackened spice. Sear and roast in 350° oven for approximately 7-10 minutes or until meat thermometer reaches 120ยบ.

Cabernet reduction:
6 oz. Kunde Family Estate Reserve Cabernet Sauvignon
1 oz. chopped shallots
1 bay leaf
10 black peppercorns
8 oz. beef broth
Salt and pepper
2 sprigs Italian parsley

Sweat shallots with butter until golden. Add bay leaf, peppercorns, parsley and Cabernet Sauvignon and reduce 60%. Add beef broth and cook until half remains.

Crostini:
1 Sourdough baguette
Extra virgin olive oil
Salt and pepper
Thinly slice baguette at a slight angle, drizzle with olive oil, and salt and pepper. Bake in a 350° oven for 5 minutes or until light golden brown.

Finely zest one Valencia orange and dry in oven at 350° for 2-3 minutes.

Slice tenderloin thinly, approximately same size as crostini. Top each crostini with a piece of tenderloin and Cabernet reduction, oven dried orange zest and toasted pumpkin seeds.

Serve with:
