Serves 4

4 salmon filets, skin and bones removed

3 Tablespoons chopped fresh dill
1 large shallot, minced
¼  lemon, juiced
½  cup Sour Cream
3 dashes hot sauce
Salt and Pepper to taste

Mix all sauce ingredients in a small bowl and set aside to allow the flavors to integrate. Note: The sauce can be made a day in advance.

Preheat oven to 450 degrees.

Arrange salmon filets on a baking dish or baking sheet with sides ( to catch any juices) and spoon a generous amount of sauce over each filet. Bake for 12-15 minutes, or until the salmon is just cooked through. Serve with additional sauce on the side. For a sumptuous dinner feast serve with a green salad, or Black rice pilaf.

If you are preparing this as an appetizer, cut filets into 1 inch pieces and top with a dollop of sauce, and bake at 450 degrees for approximately 8-10 minutes. Top each piece with a sprig of dill for garnish.
