Calamari in a Sicilian Red Sauce
A classic Italian dish perfect for friends and family.
Calamari in a Sicilian Red SauceIngredients:
1/4 cup extra virgin olive oil
2 tbsp. pine nuts
2 tbsp. currants
1 tbsp. hot chili flakes
1/4 cup caperberries
2 cups tomato sauce
1 cup instant couscous
1 1/2 lbs. cleaned calamari tubes, cut into 1/4 inch rings, tentacles halved
salt and freshly ground pepper to taste
3 green onions, thinly sliced
Heat oil until very hot in a large skillet or saute pan. Add the pine nuts, currants, and chili flakes and saute, stirring just until nuts are golden brown, 1 to 2 minutes. Add caperberries, tomato sauce and couscous and bring to a boil. Add calamari, stir to mix and simmer 2 to 3 minutes, or until calamari is just cooked and completely opaque. Cover and simmer for 1 minute and leave undisturbed for 5 minutes, then fluff and stir with a fork. Season with salt and pepper and pour into a large bowl. Sprinkle with the green onions and serve warm.
