Crab Citrus Salsa

Fresh and spicy! This salsa will brighten up any gathering.

Crab & Citrus Salsa

Crab & Citrus Salsa Ingredients:
9 oz fresh crabmeat, flaked
1 red bell pepper, seeded and chopped
4 tomatoes, chopped
3 scallions, chopped
1 tbsp. chopped fresh flat-leaf parsley, plus extra sprigs to garnish
1 fresh red chili, seeded and chopped
3 tbsp lime juice
3 tbsp orange juice
Salt and pepper
Lime wedges, to garnish
To Serve:
Thin carrot, thin celery, and tortilla chips.

Put crabmeat, bell pepper, tomatoes, scallions, parsley, and chili in a large, nonmetallic bowl. Add the lime juice and orange juice, season to taste with salt and pepper, and mix well. Cover with plastic wrap and let chill in the refrigerator for 30 minutes to allow the flavors to combine.

Remove the salsa from the refrigerator. Garnish with parsley sprigs and lime wedges and serve with thin carrot and celery sticks and tortilla chips for dipping.
