Grilled Lamb Chops with Roasted Garlic
Simple and tasty! Lamb chops with garlicky marinade, especially delicious with our Estate Barbera.
Grilled Lamb Chops with Roasted GarlicIngredients:
1/2 cup extra-virgin olive oil
2 teaspoons of dried thyme
1 minced garlic clove
2 heads of garlic cut in half
2 teaspoons dried rosemary
8 lamb loin chops
Salt and freshly ground black pepper
Combine the 1/4 cup of olive oil with the thyme, minced garlic and rosemary. Add the lamb chops and turn to coat with the marinade and refrigerate overnight. Preheat the oven to 350°. Set the halved heads of garlic on a baking sheet covered in foil and drizzle with ½ cup of olive oil. Wrap the garlic in the foil and roast for 1 hour, or until soft. Start your grill and remove the lamb chops from the marinade. Season the lamb chops with salt and pepper and grill over moderate heat for 5 minutes per side. Serve the lamb chops with the roasted garlic.
