Nanny's Traditional Sausage Stuffing

Nanny's Traditional Sausage Stuffing

1 lb. Jimmy Dean Sausage (Nanny's #1 rule: It’s gotta be Jimmy Dean's!)
2 -3 Tablespoons butter
3 stalks celery, diced fine
1 large yellow onion, diced fine
2 cloves garlic, minced
½ bunch fresh Italian Parsley, minced fine
2 pkg. Pepperidge Farm seasoned bread crumbs
2 cans chicken broth
2 beaten eggs
1 cube melted butter
Extra poultry seasoning
Salt and pepper to taste

Brown sausage and drain off the grease onto a paper towel. While cooking, make sure to crumble into tiny pieces. Melt butter in a large sauté pan. Add the celery, onion, garlic and parsley to the pan and sauté slowly, until vegetables have softened. Remove from the heat. Into a large bowl, add the bread crumbs, eggs, melted butter, sausage, sautéed vegetables, and then begin to add the chicken broth. Mix as you go. You want the stuffing to be moist but not overly wet. The consistency once mixed will be about the same as when you pull it out of the bird. Stuff your bird and put in the oven per your turkey’s directions.
