Pistachio Sundaes

The lemon curd really pairs well with Kunde Moon Light. Quick and easy!

Pistachio Sundaes

Leslie's Wine Cake Ingredients:
1 cup roasted pistachios (shells removed)
1/4 cup water
1/2 cup sugar
Lemon curd
Organic vanilla ice cream
Whipped cream

In a small saucepan, combine water and sugar. Turn stove onto medium high heat and bring it to boil, boil rapidly for 4 minutes. Add shelled pistachios, stirring constantly until sugar begins to crystalize. Remove from heat and transfer hot nuts to a parchment lined cookie sheet. Immediately sprinkle with salt. Let cool completely. Use nuts as a topping to vanilla ice cream drizzled with warmed lemon curd and a dollop of fresh whipped cream.
