2 tbsp. butter
1 tbsp. sugar
1/4 cup chicken or vegetable stock
1 large grilled portobello mushroom
2 slices yellow onions
2 slices provolone cheese
2 slices toasted sourdough bread
Melt the butter in pan. Add the 2 slices of yellow onion and cook until slightly brown and beginning to caramelize, about 10 minutes. Add sugar and chicken or vegetable stock. Cook for about 5 minutes until syrupy. Remove from heat.
Assemble the sandwich. Place the portobello mushroom and caramelized onions on one slice of the toasted sourdough. Add the cheese to the top and put under a broiler for a quick minute to melt the cheese. Top with the second slice of sourdough and you've got a yummy sandwich!
