Sizzling Shrimp Scampi
A quick and easy sizzling appetizer created by the Kunde culinary team.
Scampi refers to shrimp that are split, brushed with garlicky butter and broiled. The recipe here calls for flavoring butter with lemon and lime, garlic, cilantro and a bit of thyme, then dotting it liberally on shrimp and roasting the shellfish until it sizzles.
1/2 cup sweet unsalted butter, softened
2 large garlic cloves, very finely chopped
1 T. plus 2 tsp chopped fresh cilantro
1 tsp. finely grated lemon zest
1 tsp. freshly squeezed lime juice
1/2 tsp. thyme
Salt and freshly ground black pepper to taste
3 pounds large shrimp—shelled and deveined, tails left on
1 tsp. thinly sliced basil leaves
Thinly sliced lemon rind
Crusty bread, for serving
Preheat the oven to 450 degrees. In a medium bowl, mix the butter with the garlic, 2 teaspoons of the cilantro, the lemon zest, lime juice and thyme and season with salt and pepper. (This flavored butter can be refrigerated for up to 1 week or frozen for up to 1 month).
In a large gratin dish, arrange the shrimp, tails up, in a circular pattern. Dot the shrimp with the flavored butter, add lemon rind and roast for about 10 minutes, until the shrimp are pink and the butter is bubbling. Sprinkle the shrimp with the remaining 1 tablespoon of chopped cilantro and the basil leaves.
Serve Sizzling Shrimp hot with bread as an appetizer.
