Grilled Apricots Stuffed with Blue Cheese, Marcona Almonds and Wrapped in Parma Ham

Grilled Apricots Stuffed with Blue Cheese, Marcona Almonds and Wrapped in Parma Ham Ingredients:
6-8 fresh ripe apricots
small blue cheese wedge of choice
4-6 slices of parma ham - 1/2 per apricot
12-14 marcona almonds - any nut will work (walnut, hazelnut, almond)
olive oil
salt

Preparation:
Heat grill or grill pan to medium high heat. Halve and pit each apricot. Place them on a sheet pan and brush with a bit of olive oil and a pinch of salt. Oil grill then place apricots on grill for 2-3 minutes per side. Let rest for 5-8 minutes, while apricots are resting prepare cheese and parma ham.  Make 12-14 small chunks of blue cheese, set aside in bowl. Slice each piece of parma ham in half.

To assemble - place a chunk of blue cheese in the middle of each apricot half then add the marcona almond and take the ham and wrap each apricot half until secure. Continue to assemble all apricots. You can serve immediately or you may put under the broiler to crisp up the parma ham a bit - watch carefully 2-3 minutes. Serves 4-6.
