Winemaker's Secret Caesar Salad

Caprese Steak Starter

Dressing Ingredients:
In a blender combine the following:
1 clove garlic, grated on a microplane zester, or very finely chopped
½ lemon, juiced (optional, use zest as well for extra citrus kick)
1 Tablespoons Magnolia Lane Sauvignon Blanc
1 teaspoon hot sauce (Tabasco or Crystal)
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon drained and finely chopped capers
½ cup mayonnaise
½ cup shredded parmesan cheese
½ teaspoon anchovy paste or 1 filet finely mashed/chopped
salt and freshly grated coarse black pepper

Blend until well combined, set aside to allow flavors to marry. Double or triple the recipe easily to prepare for leftovers or larger parties.

To serve, drizzle over fresh romaine leaves and top with garlic croutons and additional parmesan cheese. Top with grilled chicken, salmon or prawns to turn the salad into a meal, serve with a big glass of Magnolia Lane Sauvignon Blanc!
