2005 Cabernet Sauvignon
Harvest/Winemaking
- Crafted from a blend of 93% Cabernet Sauvignon, 3% Syrah, and 3% Malbec, and 1% Petit Verdot.
- Harvest began on October 11 and finished November 5 from multiple vineyard blocks at an average Brix of 25.7°.
- In February 2005, temperatures were well above normal, and we worried the vines would start pushing new growth out before the chance of killing frost had past. Fortunately, the vines were too smart, and they waited for a fairly normal timing on both bud break and fruit set. Temperatures at set were cool; nevertheless, 2005 yields were solid. Plenty of hang time led to ripe flavors and a slightly late harvest.
- Syrah and Malbec were blended with the Cabernet to create a deeper colored, fuller bodied, richer flavored wine.
- Aged for 15 months in small French and American oak cooperage.

The 2005 Kunde Estate Cabernet Sauvignon is the epitome of Sonoma Valley Cabernet; herbal accents of fennel and anise wrap around a core of black raspberry and black cherry flavors so typical of Kunde's rolling hills and steep mountain grape blocks. A touch of Syrah, Malbec, and Petit Syrah adds color and richness to the wine - we'll break with the French blending tradition if it reveals the best of our land and its fruit! This fabulous wine was crafted using 80% hillside fruit. Grill some smoky pork chops stuffed with apples and gorgonzola, open a bottle of Kunde Estate Cabernet, and impress your mouth."
