Wolf House Apple Salad

Wolf House Apple Salad Thank you to our friends at the Wolf House Restaurant in nearby Glen Ellen, California, for this yummy salad recipe. Our Estate Viognier makes for a wonderful wine pairing as well as our Estate Chardonnay.

Cider Vinaigrette Ingredients:
1 cup clover honey at room temperature
1 cup organic cider vinegar
1/2 cup flat champagne
1 tbsp. dry mustard
1 1/2 tbsp. dry ginger
1 tbsp. crushed green peppercorns
1/2 cup rice oil

Preparation
:
Blend honey with dry spices. Whisk in vinegar and champagne until combined. Slowly whisk in oil until emulsified. Add salt to taste.

Apple Salad Ingredients:
2 head Romaine lettuce hearts
2 semi-sweet apples with skins left on
4 oz. bleu cheese in large crumbles
2 oz. sundried cherries
2 oz. cider vinaigrette
ground sumac for garnish

Preparation:
Chop romaine into 1/2 inch wide strips and place into a medium mixing bowl. Slice apples into 1/4 inch slices, add to mixing bowl along with the cherries, bleu cheese, and spiced walnuts. Add the cider vinaigrette and toss gently as to not bruise the lettuce or break the bleu cheese into too small crumbles. Serve on chilled plates. Garnish with ground sumac. Serves 4.
