2 baskets of strawberries
1 cup water
2 tablespoons cornstarch
2 drops red food coloring
Granulated sugar, as needed
3-1/2 oz cream cheese
1/2 cup powdered sugar
1/2 tsp vanilla
1/2 pint fresh whipped cream
Mash 1/3 of strawberries in a saucepan. Add water, cornstarch and food coloring. Bring to a rolling boil until thickened and let cool. Slice remaining strawberries and dust with sugar and add to cooked berry mixture.
Mix cream cheese with powdered sugar and vanilla. Once creamy, fold in whipped cream. Spread filling into a 8 or 9 inch baked pie shell.
Top pie with the strawberry mixture.
