⅓ - ½ lb. hamburger
1-2 garlic cloves - minced
¼ teaspoon paprika
½ teaspoon dried oregano
½ teaspoon onion powder
½ cup scallions – thinly sliced
1 tomato - chopped
½ cup black olives - sliced
1 ½ cup shredded jack cheese
½ cup cotija - crumbled (Mexican cheese)
optional toppings - fresh sautéed corn, sour cream
1 homemade or store bought pizza dough - rolled to 12-14 inches
Heat grill or oven on high heat to 500 degrees with pizza stone inside.
Cook hamburger in 1 tablespoon olive oil over medium heat for 3 minutes then add 1 minced garlic clove, salt, pepper, paprika, dried oregano and onion powder. Continue cooking until browned - drain and set aside in bowl.
Prepare toppings and cheeses.
Prepare pizza – dust flour or cornmeal under crust for easy transfer to pizza stone. Gently brush dough with olive oil, sprinkle jack cheese then add hamburger.
Slide pizza onto hot stone and cook for 4-8 minutes until cheese is melted and sides of crust are crispy.
Sprinkle top of hot pizza with olives, tomato, scallions and cottage cheese (corn and sour cream if using). Serve immediately.
