Blue Cheese Roasted Pear Salad


Two pears
Juice of 1/2 a lemon
1/2 cup crumbled blue cheese
Fresh ground pepper to taste
Your favorite balsamic vinaigrette dressing
Mixed salad greens
1/2 cup dried cranberries


Cut pears in 1/2 lengthwise and toss in the lemon juice. Place in a greased baking dish cut sides up. Stir together the blue cheese and pepper and fill each pear cavity with the cheese.

Place pears in a preheated oven at 400° F and bake for 20 minutes or until pears are lightly cooked and cheese is bubbling.

Place a generous portion of salad greens on 6 salad plates.

Take each pear and slice as you would a fan and place over the salad greens. Drizzle the vinaigrette over the pears and the greens and sprinkle with dried cranberries. This is a really pretty presentation!
