Winemaker Notes
Our sparkling wine begins with primary fermentation in stainless steel tanks, designed to preserve pristine fruit purity and vibrant acidity. Secondary fermentation then occurs directly in the bottle, followed by an extensive 30 months "en tirage" on its lees. This patient, prolonged aging contributes significantly to the wine’s remarkable depth, complexity, and its exquisite textural richness.
