Bacon Lettuce and Tomato Sandwich with Smoky Aioli Sauce

Instead of making individual sandwiches, you can put the ingredients out let folks make their own.

  • 1 lb bacon - cooked as you like it
  • 2 ripe tomatoes - sliced
  • 4-8 lettuce leaves - romaine or butter leaf, cleaned
  • 1 avocado - sliced
  • 8 slices artisan bread
  • 1/2 cup mayonnaise
  • 1 egg yolk - room temperature
  • 3/4 cup olive oil
  • 1-2 tsp apple cider vinegar
  • 1-2 T chipotle in adobe sauce - minced if using chili
  • 1 tsp salt

To prepare the aioli sauce, whisk egg yolk by hand in a small bowl and slowly drizzle olive oil in bowl while continuously whisking. Add apple cider vineyard and salt. Whisk in the chipotle sauce to your desired taste.

Assemble the bacon, tomato, lettuce. avocado and mayonnaise on the artisan bread and drizzle the sauce. Serves 4.
