Bacon Lettuce and Tomato with Smoky Aioli Sandwich
1 lb bacon - cooked as you like it
2 ripe tomatoes - sliced
4-8 lettuce leaves - romaine, butter leaf or other - cleaned
8 slices artisan bread
1/2 cup homemade aioli (store bought mayo will work)
1-2 tablespoons - chipotle in adobe sauce - minced if using chili
1 avocado - sliced, optional
1 egg yolk - room temperature (place in a small bowl of warm water for a few minutes)
1-2 teaspoons apple cider vinegar or lemon juice
1/2 tsp salt
3/4 cup light olive oil, avocado oil or other neutral oil
To prepare the aioli sauce, whisk aioli ingredients by hand in a small bowl or use a blender. By hand, place yolk in bowl and place bowl on a towel to help keep in stationary while whisking. Slowly drizzle oil in bowl while continuously whisking. Then add lemon juice, salt and taste and chipotle sauce to your desired taste.
You can assemble sandwiches and then serve or you can serve family style and let everyone make their own sandwich. Serves 4.
