Bacon Lettuce and Tomato with smoky aioli

1 lb bacon - cooked as you like it

2 ripe tomatoes - sliced

4-8 lettuce leaves - romaine, butter leaf or other - cleaned

8 slices artisan bread

1/2 cup homemade aioli (store bought mayo will work)

1-2 tablespoons - chipotle in adobe sauce - minced if using chili

1 avocado - sliced, optional

Aioli

1 egg yolk - room temperature (place in a small bowl of warm water for a few minutes)

1-2 teaspoons apple cider vinegar or lemon juice

1/2 tsp salt

3/4 cup light olive oil, avocado oil or other neutral oil

You can make this by hand with a whisk and bowl or using a blender. By hand - place yolk in bowl and place bowl while continuously whisking. Then add lemon juice, salt and taste and chiopotle sauce to your desired taste. If using store bought mayo mix in chipotle sauce to desired taste. 

You can assemble sandwiches and then serve or you can serve family style and let everyone make their own sandwich. Serves 4.
