Caramelized Apple Salad with Blue Cheese, Walnuts and Dijon Dressing

I’m a big fan of blue cheese and this combination of caramelized apples and walnuts provides wonderful layers of flavors.

Caramelized Apple Salad with Blue Cheese, Walnuts and Dijon DressingIngredients:
  • 2 T butter
  • 2 apples – halved, cored and sliced into 1/4 inch wedges
  • 1 T honey
  • 4-6 large handfuls of mixed salad greens
  • 3/4 cup blue cheese – crumbled
  • 1/2 cup walnuts – toasted and chopped
Dressing
  • 1 T apple cider vinegar
  • 1/4 cup olive oil
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper
Preparation:

Prepare the dressing by whisking all ingredients together in a medium bowl and set aside.

To prepare the apples, melt butter in large sauté pan over medium heat, add apples and cook for 5 minutes, turning occasionally. Drizzle honey over the apples and continue to cook and stir until slightly brown and caramelized. Place apples on a plate to cool.

To prepare the salad, toss greens with the dressing (may not require all dressing) then add apples, blue cheese, walnuts and serve immediately. Serves 4-6.
