Caramelized Apple Salad with Blue Cheese and Walnuts with a Dijon Dressing

Ingredients:

2 apples - honey crisp or other firm apple (halved, cored and sliced into 1/4-1/2” wedges)
2 T butter
1 T honey
6 oz. blue cheese - crumbled
1/2 cup walnuts - toasted and chopped
4-6 large handfuls of mixed salad greens (washed and ready)

Dressing

1 T apple cider vinegar
1/4 cup extra virgin olive oil
1 tsp Dijon mustard
1 tsp honey
Salt and pepper to taste

Preparation:

Melt butter in large sauté pan over medium heat, add apples and cook for 5 minutes, turning occasionally, then drizzle honey over apples and continue to cook and stir until slightly brown and caramelized. Put apples on a plate to cool.

To prepare salad: toss greens with dressing (may not use all dressing) then add apples, blue cheese and walnuts and serve immediately. Serves 4-6
